3:00 Chocolate Cake

So I gotta say that I love easily accessing recipes online!  Perfect in a pinch! With either a laptop or ipad on the kitchen counter, that's all one needs to get things going!... and ingredients of course! ;-)  It seems that so many recipes I look up are at... http://allrecipes.com. Every recipe i've tried from here has turned out always at 4-5 stars in my opinion!  And this was todays wonder that got a 6 year olds 2 "thumbs up"!

What better thing to do with a kid after school but engage them with learning and participating in baking a home made chocolate cake... with icing of course!  From picking what to make, to making a list, shopping for the essentials and measuring n' mixing.   Such a healthier alternative that will stay with them their entire lives; other than letting "sitter telly" do all the work!  I think its important to have that personal connection with them and to food!   Much different than buying a cake out of the box or pre-made from the bakery.  Passing on teachings of healthy, sustainable lessons my Nana passed onto me; with love.


 

3:00 Chocolate Cake

Ingredients
  • 2 cups white sugar
  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

Directions
  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour two nine inch round pans.
  2. In a large bowl, stir together the sugar, flour, cocoa, baking powder, baking soda and salt. Add the eggs, milk, oil and vanilla, mix for 2 minutes on medium speed of mixer. Stir in the boiling water last. Batter will be thin. Pour evenly into the prepared pans.
  3. Bake 30 to 35 minutes in the preheated oven, until the cake tests done with a toothpick. Cool in the pans for 10 minutes, then remove to a wire rack to cool completely.
 

Chocolate Whipped Icing. 

Ingredients:
  • 120 grams of butter
  • 2 ½ cups of icing sugar
  • ½ cup of cocoa
  • 1/3 cup of milk
  • 1 teaspoon of vanilla essence
Method:
  1. Chop the butter, place it in a bowl and cream it using an electric mixer or wooden spoon.
  2. Add the cocoa and the icing sugar a little at a time and beat into the butter.
  3. Add the milk and vanilla essence, mix until smooth and light.                         I actually mixed by hand the entire recipe.... a good work out!  lol 

make sure you let the cake cool before icing! Was perfect in time for an after dinner desert. The pre-dinner treat was filled with cake batter remnants and the covenant licking of the beaters! lol... in our case... the whisk.  

SERVE WITH A GLASS OF MILK OR SUBSTITUTE & ENJOY.
